Katori Chana Chat | Special Ramadan 2020 Recipe | Delicious Aloo Cholay Chana Chat

Preparation Time : 40 to 45 minutes
Cooking Time : 10 - 15 minutes
Serves : 3 - 4


STEP 1: PREPARE MEETHI CHUTNEY:

Ingredients:
  • 2 cups of tamarind pulp
  • 1/2 cup of White sugar
  • 1/4 tsp of Garlic Powder
  • 1 tsp of red chill flakes
  • 1/2 tsp of cumin seeds (Zeera)
  • 1/2 tsp of Salt or to taste
METHOD: 

  • In a pan, add all ingredients and cook until sauce thickened. Set aside.

STEP 2: PREPARE HARI CHUTNEY:

Ingredients:
  • 1 cup of Fresh Coriander
  • 3 to 4 green chilies 
  • 1/2 cup of mint leaves
  • 1/4 tsp of Cumin seeds (Zeera)
  • 1/4 tsp of Salt or to taste
  • 50 ml of Cold water 
METHOD: 
  • Blend well all ingredients into smooth paste. Set aside.

STEP 3: DOUGH PREPARATION:

Ingredients:
  • 1 cup of all purpose flour (Maida)
  • 1/2 tbsp of Salt or to taste
  • 1 tbsp of Oil / Ghee
METHOD: 
  • In a bowl, add all the ingredients and gradually adding water to dough.
  • Once its done, let it rest for about 20 minutes at room temperature.

STEP 4: KATORI MAKING:

Ingredients:
  • Prepared Dough
  • Rolling pin
METHOD: 

  • Take out Dough, divide in to small dough balls. 
  • Roll out the dough ball with the help of rolling pin on a flat surface.
  • In a small bowl, roll out the dough by pressing the edges.
  • Prick holes with Fork.
  • Cut out the edges.
STEP 5: FRYING:

Ingredients:
  • Oil for deep frying
METHOD: 

  • Fry the prepared dough. 
  • Carefully remove the bowl from oil or just use tong.
  • Fry till golden brown.

STEP 6: ASSEMBLING:
  • 2 cups of Boiled chickpeas
  • 2 medium sized potato, cut in cubes
  • 1 medium sized tomato, deseed, cut in cubes
  • 1 normal sized cucumber, cut in cubes
  • 1 normal sized onion, cut in cubes
  • 1/2 tsp of Chat Masala
  • 1/2 tsp of Coriander Powder ( Sukha Dhania )
  • 1/2 tsp of Red chili Flakes
  • 1 tsp of Cumin Seeds (Zeera)
  • 1 tsp of Salt or to taste
  • 1 tbsp of White Vinegar
  • 1 cup of whisked yogurt
METHOD: 
  • Mix well all together except whisked Yogurt. Set aside partially prepared Chana Chat.
  • In a cooked Katori (Bowl shaped Dough previously fried), add partially prepared chana chat, then whisked yogurt, hari chutney, meethi chutney, some more Chana Chat. Sprinkle with red chili flakes.
